Hungry in a hurry is my new blog post theme under which I will share my tasty creations that require a short time to prepare.
My first test-recipe, if you will, is a super tasty and quick sandwich. Everyone loves sandwiches because they kindle our imagination, let us be free in the kitchen and experiment.
Today’s Frankenstein sandwich contains:
- bread (of your liking)
- avocado (pick a ripe one)
- grilled paprika (I used from a jar, but if you have time grilled it yourself – it will be worth it)
- grilled aubergine (I grilled in a cast iron pan – it gives a nice smoky taste)
- peanut butter
- coconut oil, salt, pepper (use condiments of your liking)
Cut aubergine and salt it. Leave it for 5-10 minutes and after dry it with a paper towel.
Heat a cast iron pan on the highest heat. Wait for it to reach the temperature. Grill the aubergine pieces until golden brown. I also fried cut bread in little oil.
Once the bread is nicely brown, start composing your creation.
For the first layer, I used peanut butter mixed with a bit of honey. I thought it may complement the grilled paprika quite nicely. And it did! Then I mashed avocado on the peanut butter and mixed them together.
Afterwards, I cut my paprika in thin lines and covered it with grilled aubergine. Topped everything with pepper and a pinch of salt.
